Lemon + Ginger Zinger Bites

A super easy, yummy & healthy sweet treat when you need a little pick me up that packs a nutritional punch!


Filled with vitamins B, E & K, calcium, magnesium, phosphorus, zinc & potassium, plant protein, healthy fats and natural stimulants these guys pack a punch with out piling on the pounds!


FreeFrom Dairy, Gluten, Eggs and totally Vegan.

Obvs. NOT suitable for those who suffer with nut or seed allergies!


Takes about 20-30 minutes from start to finish and they’ll keep in the fridge for a couple weeks - but I doubt they’ll last that long!


 


RECIPIE

Makes as many as you like but nutritional values based on 18 balls

Just 88 cals. per bite

7g Carbs, 6g Fat & 2g Protein

Low calories & carbs

High protein & filled with healthy fats and omegas for radiant skin & brain function.


INGREDIENTS

•5 tbsp. of each:

.Raw unsalted Almonds

.Sunflower seeds

.Pumpkin seeds

.Sesame seeds

.Dried Coconut chips

•5 tsp. Cacao nibs (ground finely)

•5 Medjool dates (no stones)

•2 tsp. Lemon essence plus a squeeze of lemon juice

•1/2 tsp ground ginger (or more if you love it!)

•1/2 tsp Pink Himalayan salt


HOW TO

Bung all nuts & seeds in the food processor, blitz until fine meal

Add the salt & dates and whizz again until starts to clump & peel away from sides

Then add lemon essence & juice and ginger powder and whizz again until starts to form a dough.


Pop it into the the fridge to cool

Wash your hands and get a spoon.


After about 10 mins get dough out of fridge

Put a spoonful in your hand and squeeze together, forming a little ball or disc

Repeat until you have used all the mix


Keep them in the fridge, sealed so they don’t collect other flavours.
